Ingredients
- 1½ lb Brussels sprouts, trimmed and halved (or frozen, I don't judge)
- 2 small butternut squash - trimmed, peeled, seeded, and medium diced. Or, as previously mentioned, frozen.
- 2 lb chicken thighs, boneless skinless
- 1 small pkg fresh thyme leaves
- 4 cloves garlic
- black pepper
- extra virgin olive oil
- pure maple syrup
- salt
- Preheat oven to 450°F.
- Toss Brussels sprouts, squash, thyme, and garlic with oil and maple syrup; season with salt and pepper. Spread out in a single layer on a baking sheet.
- Season both sides of the chicken with salt and pepper; nestle chicken in the veggies on the baking sheet.
- Place baking sheet in the oven; bake until the chicken is cooked through and veggies are tender, 20-25 minutes. Check periodically to move the veggies around for more even cooking.
- To serve, divide roasted veggies and chicken between plates. Enjoy!
